WELL its a birthday so you have to HAVE CAKE !!!!!!! I am not a baker way tooo much measuring and exactness ( NOT ME ) so a box mix will do SORRY to ALL U professional bakers (I know my limits ) He likes a MARBLE cake w/ CHOCOLATE frosting n thats WHAT he got !!! DAD frosted while I did dinner I made CAKE early this am BETWEEN my ZOO & FARM games LMAO !!! I can not believe I AM DOING THIS !!!!!! OMG SO not me !!! ANY WAY sorry for another rant !! HI!!! Welcome everyone , yesterday April 10th 2010 was my youngest sons 23rd birthday !! We went out for dinner to CARMEN ANTHONYS !!! It was great !! Justin was born on a MONDAY ( a C-section scheduled he was my 5th preg. n like 3 yrs ( ANOTHER TIME KKK I WILL WRITE )!!!! 2 nd child ( oldest his bro. (MARINE) was 4th ) STAY tuned for HISTORY LATER BACK TO REALITY !!! RICK my AWESOME , AMAZING HUSBAND of almost 34 yrs came w/ Christian 27 mos.old in a LIMO to pick us up !!! It was my 35th bithday on Thursday April 13 th , ALSO HOLY Thursday n I had to cook for EASTER !!!! OMG TAlK about DRAMA !!! but as you know I handled it !!! SOrry to RANT but it kinda just came out ( that's what this is all about right ) !!!SO ANYWAY to nites dinner was VEAL MARSALA over fresh Linguine , you know lots of fresh SLICED garlic n parsley !!!!!!

HOLY SATURDAY April 3, 2010
SATurday nite before EASTER I usually TRY n not COOK but kinda never works out that way !!! NO problem , right casue I LUV to COOK !!!!!! ANY way we were having FRESH shrimp from CHINA TOWN , NY over Rigatoni w/ VINCENTS Sauce !!!!! AWESOME !!!!!!!!!!!!!!!!!!! SAUCE is like NO OTHER !!!!!! SHRIMP so fresh taste like ocean !!!! ENJOY
Good Friday nite dinner WHITE CLAM PIZZA
Came home from LITTLE ITALY n put away food n had to run to # 1 Fish Market n get little necks 24 ( 2 doZ ) & minced clams , go 2 pizza rest & get 3 small doughs n of COURSE LIQUOR Store ( just to make sure ) I had enough WINE 2 get through the nite !!! LMAO TUFF ONE !!! Then came home n proceeded to wash n scrub clams then cook them in pan till they opened n then ............. make other clam sauce n make pizzas !!!!! HUBBY, bro-in-law, cousin, (MY KIDS OUT 4 dinner ) RESULTS FOLLOW 1st one was gone n seconds no pics this was 2 nd one !!!!!

Every GOOD FRIDAY since I was very little we used to go to Atlantic Ave., Brooklyn, NY to buy our LEBANESE FOOD then cross the bridge and go into LITTLE ITALY and eat at VINCENT'S CLAM BAR corner of Hester n Mott!!!!!! THEN walk around n shop @ various stores !! WE StILL carry on that TRADITION 2day !!! I /WE luv it !!! So the pics will follow that DAY !!! ENJOY as I have n GOD willing will continue to !! IF any of you want to JOIN us just let me KNOW we can MEET N NY !!!!!
HI !!!!! Everyone its been a few days since I've written !!!! SO SORRY and I do miss this I will continue , hopefully daily from now on .I think I'm kinda caught up well ,as can be expected for now . My MARINE son came home on HOLY Thursday , which was April 1 st last week as today is Friday OMG its been over A WEEK wow !!! TIME DOES FLY BY !!!! That was crazy enough but a family tradition is we go to NEW YORK , on GOOD FRIDAY , which I/we still did !!! NEED I say more then SAT was last minute shopping early for fresh produce , and the prepping had begun , then it was an EASTER FEAST (pics will follow ) !!! THEN just plain craziness w/ him home n regular tasks!! NOw weather is getting warmer I am also responsilbe for outside as well .SOMEONE has to work , ( I DO NOT ) so I do it all inside & outside !!! I will explain GOOD FRIDAY at another time it needs is own SPACE !!!

Good Evening everyone !!! Another , down pouring rainy day n CT !!!! dinner for boys/men was boneless organic chicken thighs over angel hair w/ vincents sauce ( from Little Italy ) & a nice caesar salad !!!! NO PICS !!! I then sauteed myself some sausage links removed from skins w/ leftover butternut squash n roasted garlic added some scallions!!!! AWESOME

hi!!!! THIS WILL PROBABLY BE A RECORD 4 POSTS N 1 DAY I HOPE SO DO NOT WANT TO MAKE A HABIT OF THIS ( lmao ) ANYWAY AS YOU KNOW I DID NOT GET MUCH PIZZA SO I MADE ANOTHER ONE !!!!!!!!!!!!!!!!!!!!! I GOT SMART I MADE PLAIN W/ANCHOVIES, 1 OF MY FAV'S !!!!!!!!!!!!!!!! BUT NO ONE ELSE'S !!!!!!!!!!!!!!!!!!! BINGO NO ONE WILL EAT FINALLY DINNER N LEFT OVER 4 BREAKFAST !!!!!!!!!!!!!!!!!!!!

PIZZA : fire roasted tomatoes , very little mozz , lots of SLICED
GARLIC , small white onion , fresh grated cheese,
black pepper & oregano , & of course BACON
COOK : in a PRE heated OVEN 550 10 minutes then take off pan
put on wire rack w/ pizza wooden board ( as seen in PIC )

HI!!!! IT's late n they were starving , CAUSE I was on this ALL day doing my zoo n moving my FARM !!!! I LIKE this much bettter !!! SO for dinner they had chicken ( which you should know by now I do NOT eat ) so I had to make my self something QUICK !!!!! WEll it wasn't quick but they have eaten and mine just came out of oven !! YES I made a PIZZA FOR ME A QUICK GO TO !!!!
DINNER :
Emeril's Chicken Breasts with Dijon
my version is a little different BUT I give CREDIT when its do !!!!!
I use organic chicken boneless thighs (they like these )
served w/ waffle fries & corn niblets
Ingredients:
6 boneless organic chicken thighs
EVOO
white pepper
sliced shallots
dry white wine ( 2 nite's was lightly oaked chardonnay)
Dijon mustard
heavy cream ( I use 1/2 n 1/2 cause Rick uses that n his
coffee ( I drink mine BLACK out of POT )
fresh Tarragon & fresh parsley
Directions:
season chicken both sides w/ pepper
heat oil n pan add chicken cook 4-6 minutes per side
increase heat to high add shallots & WINE
cook 5 minutes , remove chicken set aside
whisk n mustard & cream , bring to a boil
reduce heat n simmer until thick & bubbly
add fresh tarragon & parsley
remove from heat , spoon sauce over chicken
SERVE IMMEDIATELY ♥♥♥♥
Good Morning, Happy Palm Sunday to ALL!!!! It is a very cold and RAW day in CT. Hubby is playing GOLF , he must be frozen by now !!! I made his breakfast and off he went at 8 am this morning. Then I made my breakfast which you shall see !

HI!!!! what an amazing day!!!! Leslie picked me up and we went to Whole Foods n Orange, CT . WE meet a "NEW" FB friend it was SPECIAL !!!!! Did some awesome shopping n then took the girls to a RESTAURANT DEPOT , which I belong too !!! Another GREAT shopping for FOOD trip !!!! Came home and did FARMVILLE I guess I have become ADDICTED to!!! Then had to think about dinner it was getting close to that TIME !!!! so with all my new fresh purchases , I thought n thought !!! First ,most important I poured myself a glass of Lightly Oaked Chardonnay !!THen saw VEAL fresh from thursday!!! SO I decided lets do a spinach on bottom n a piece or two of veal then scallops & shrimp on top with silver sliced purple potatoes (BLUE)
and awesome scallions I brought today with a chef's sampler mushroom , organic , package!!!
Ingredients:
EVOO , silvered garlic
veal cutlets
thin silvered sliced baby purple potatoes
scallops
16-20 shrimp (size)
baby spinach
scallions
gourment mushrooms
white wine , which you have been drinking
How to make:
sautee EVOO n garlic
cook veal 2 minutes remove keep warm
cook purple potatoes remove keep warm
sautee onions and mushrooms remove keep warm
deglaze pan w/ whitw wine
cook scallops and shrimp remove keep warm
add all juices from all saved pans add spinach 5 minutess

WELCOME , Hi! It was not a very nice day today! SO I did not go out but did buy chicken cutlets yesterday at WCMP , cause my weatherman GIL the MAN, said it would b yucky n cold !!! Hubby came home and asked ( as he usually does ) What's for dinner , Hon??? I answered chicken and I want to use whats left of that pasta ( Barilla 10lb bag ) that's a whole nother story LATER!!!
So he says he wants mushrooms, shallots, n of course garlic , EVOO w/ chicken over the rigatoni!! I reply, NO PROBLEM! YIKES!!!!! I have no fresh mushrooms ( used past two nites ) AH! but in my freezer, I have a bag of baby peas n mushrooms !!! WOW dinner is now in my HEAD !! A glass of Pinot Grigio, in my hand and I begin!!!
Ingredients:
2 lbs. thin chicken cutlets
4-5 cloves of garlic
EVOO
2-3 shallots sliced thin
mushrooms ( used bag of frozen mushrooms n peas )
1/2 cup or so chicken broth
1/2 cup white wine I use Pinot or (what ever I am drinking )
salt n pepper to season chicken
pre cooked pasta of your choice ( what you have on hand )
lots of grated cheese
How to make:
cook pasta n coat w/ EVOO ( keep warm )
saute garlic n shallots n EVOO
add chicken cook 3-5 minutes each side (depending on thickness )
remove chicken ( keep warm )
deglaze pan w wine and chicken broth
add mushrooms ,then chicken
put over dishes of pasta
add fresh parsley and grated cheese

HI!!! Everyone, It was a GREAT DAY !!!! SUN was OUT !!!! AWESOME I LUV the SUN!!!!! So I was out n' bout most of the day!!! doing odds n' ends & getting more PANSIES !! another LUV of mine , as we do this together you will get to know more about ME ! Then comes the wonderful task for shopping for DINNER !!!! I go 2 a little LOCAL MEAT market !!! VEAL was on sale so that is DINNER : VEAL FRANCESE w/ string beans drizzled w/ white TRUFFLE OIL ! AN AMAZING TASTE I also saute button mushrooms w/ VEAL n of course FRESH parsley LOTS of roasted garlic, N sliced LEMONS !!!!

HI!!! It's that crazy time n my household especially on 2 rainy days n a row !!! That means me n Little Red didn't go OUT !!! SO its time 2 grab a Glass of wine n become CREATIVE n kitchen 4 dinner !!!! Rule of thumb,drink WINE while planning !!!!
I decided on frozen raw shrimp ( ALWAYS have on hand) sauteed in EVOO then added 2 TOP of a PASTA dish otherwise sauce is too thin!!!!
SAUCE: I'm starting from scratch EVOO lots of sliced garlic
can of diced fire roasted tomatoes pkg of sliced baby bellas
It's that simple, oh I added fresh parsley ,lots of fresh cracked blk pepper also!!!!
LAST minute add sliced GOAT cheese !!!
POUR over PASTA of choice we're having rigatoni 2nite !!!
ADD pasta 2 bowl then SHRIMP then sauce !!!!
YUMMO n WATCH it disappear !!!

PASTA FAGIOLI
Ingredients:
little bit EVOO
minced garlic I use lots 3-4 cloves
small onion
2 lg cans crushed tomatoes
1 cup chicken broth
1 cup ditalini
1 lg can cannellini beans
1 cup fresh peas or frozen
fresh basil & oregano can use dry
grated fresh cheese of choice 4 top
How to make:
cover bottom of pan with EVOO
add garlic and onions simmer 5-10 minutes
add tomatoes & broth bring to a boil
add fresh or dry herbs
add pasta & beans simmer 10-15 minutes
add peas last within the last 5 minutes
serve w/ freshly grated cheese
